Headlights During Precipitation

gourmet dinner.

First course:
Spaghetti with mackerel, sardines and mullet
:

ingredients for two people:


  • two fresh mackerel
  • two ounces of sardines (I used them I sottosale, well washed and rehydrated)
  • three tablespoons of whole pine nuts shelled
  • a bunch of fresh parsley
  • a pound of spaghetti
Clean the mackerel, gutted, and cut the fillets with the skin, throwing away the rest (head, tail, guts, bones) Be careful to remove all the thorns.
Clean and fillet the sardines, always taking care to thorns.
In a pan cook for 5 minutes the fish fillets in olive oil. The sardines are melting, mackerel is browning.
Add the shelled pine nuts and cook a few minutes.
Meanwhile cook the pasta slightly al dente, drain and pour into the pan with four tablespoons of pasta cooking water. Sauté the fish, arrange on plates.
Sprinkle with parsley and roe, stir and serve.


Main course: Carpaccio
Mucchino


Ingredients for two:

  • 300 g zucchini green pine
  • a spoon of red pepper in grains
  • pecorino cheese not too
  • lemon juice olive oil
  • black olives (preferably taggiasche)
wash very well the zucchini, trim and thin slices of a potato peeler it, to possess a large bowl.
mix 2 / 3 oil and 1 / 3 lemon juice in quantity ' enough to cover everything.
salt and pepper, then leave to marinate for 30 minutes.
meanwhile prepare shaved sufficient to cover the pot, boned and cut into large pieces and a dozen olives.
have carpaccio of zucchini on a large serving dish.
sprinkle with crushed red pepper coarsely, maybe with some whole grain.
lay everything on the pecorino cheese, pine nuts, pieces of olive oil and garnish with a sprig of parsley left over from the previous recipe.
